    Wash and dry all produce. Trim and thinly slice scallions , separating whites from greens. Zest and quarter lime . Drain pineapple over a small bowl , reserving the juice.

    Heat a drizzle of cooking oil in a large pan over medium-high heat. Add ground pork and a big pinch of salt ; season, breaking up meat into pieces, until browned, ⏱️ 5 minutes (it will finish cooking in the final step). If there is excess grease in your pan, carefully pour it out.

    Meanwhile, in a medium bowl, thoroughly combine coleslaw mix , scallion greens, mayonnaise , lime zest, 1 tbsp reserved pineapple juice (2 tbsp for 4 servings), and a big squeeze of lime juice. Season generously with black pepper and salt. Halve potato buns ; toast if desired.

    Add scallion whites, Sweet and Smoky BBQ Seasoning , and chipotle powder (add more for extra spice) to the pan with the pork. Stir, cooking until fragrant, ⏱️ 1 minute .

    Add pineapple, ketchup , half the cornstarch (all for 4 servings), remaining reserved pineapple juice, 1/3 cup water (1/2 cup for 4 servings), and a squeeze of lime juice to the pork mixture. Simmer, stirring until thickened and pork is cooked out, ⏱️ 3 minutes . Remove from heat and season with salt and pepper to taste.

    Divide the pork filling and some slaw between the buns. Divide sloppy pork joes between plates. Serve with remaining slaw and lime wedges on the side.
